On your iPhone, you would like to sign out of Apple Music so that you may use a different email address when you next use the app. Right? You may log out by going to the Settings page and selecting Media & Purchases. Finish your sign-out. By doing so, you will be logged out of iTunes as well as the App Store.
If you use Apple Music and have music downloaded for offline listening, all of that music will be deleted along with your Apple Music subscription.
